Here is a non-Dairy pumpkin pie recipe for anyone who can't have milk! My Mom uses it because it doesn't have any milk substitutes, as we are allergic to many of them. Be careful with the margarine, as many have dairy in them. A good brand that does not have dairy is Fleischman's unsalted stick, if you can find it.
3/4 c sugar
1/3 c brown sugar
1/2 tsp salt
1 tsp nutmeg
1 tsp cinnamon
1 tsp ground ginger
1/4 tsp cloves
1/4 tsp allspice
1 can (1 lb 13 oz) pumpkin (not pie filling)
1/2 stick margarine, melted
4 eggs, beaten
large unbaked pie shell
Preheat oven to 450 F. Mix sugars, salt, and spices. Stir into pumpkin. Add melted margarine and beaten eggs and stir thoroughly. Turn filling into pie shell. Spread evenly and create swirl pattern with knife.
Bake at 450 F for 10 minutes. Turn heat down to 350 F and bake 40 minutes or until center is like soft custard when tested with a knife.
