Vegan or Vegetarian Mac n "Cheese"....super good
Thought I would post the link for this. This is delicious! I personally am not a vegan--I'm lacto-ovo, so I used real (non hormone added) butter in place of the vegan spread (but you can make it vegan or non dairy easily by following the recipe ). I did use the nutritional yeast, as I don't think the sauce will really work with real cheese (and personally, I hate soy cheese). I left out the paprika and the soy sauce, as I'm not a fan of either, and used whole wheat pasta instead of white macaroni. I also added about a cup and a half of broccoli before cooking to this to up the nutritional value.
Served with fresh tomatoes on the side, sliced, and whole wheat (homemade) bread. And pork chops, for the man of the house or omnis.

Enjoy! I would venture to say that even meat-eaters would love this one. It is creamy (probably the tofu....don't tell DH!) and the sauce is not dry as in some vegan mac and cheeses I have tried. This is gonna become a staple for us!
