    Corn & Chicken Chowder

    I made this for dinner last night and it was soooo good. Perfect for a chilly fall night, with the perfect amount of kick from the chilies and pepper.

    I based it off of this recipe… (for pinning purposes)

    But here is the adjusted recipe I made…

    3 medium white potatoes, peeled and cubed
    1 14-oz can chicken broth
    1 15-oz can whole kernel corn
    3 slices thick-sliced bacon, diced
    2 boneless skinless chicken breasts, cubed into bite size pieces
    1 onion, diced
    1 4-oz can chopped green chilies
    3 cups fat free half & half, divided
    3 tbsp flour
    2 tsp Old Bay seasoning
    ¼ tsp ground cayenne red pepper
    1 tsp dried parsley flakes
    Salt and pepper to taste

    In a medium stockpot put potatoes, broth, and liquid drained from corn. Boil.
    Meanwhile, cook bacon pieces until crisp. Set aside on paper towel to drain grease.
    Cook chicken pieces in bacon grease until tender. Remove and set aside. Saute onion until tender.
    When potatoes are nearly tender, add bacon pieces, chicken, onion, drained corn, and can of chilies to pot.
    Add 2 ½ cups half & half. Whisk together the remaining ½ cup half & half with the flour, then add to pot.
    Bring to a boil, stirring constantly, for 1-2 minutes and then reduce heat.
    Add seasonings and simmer for about 10 minutes, stirring occasionally, to allow the flavors come together and the chowder to thicken.

    I got lazy and didn’t make the beer bread that I was going to make to go with it, but I wish I had…definitely making some for the leftovers we’ll have later this week!

    I tried this exact recipe and thought it was so gross. I think it was the old bay seasoning that turned me off though.

    No one is guaranteed happiness. You can pursue it, but if you happen to find success along the way on that road to happiness, Conservatives believe you should not be demonized or penalized for it.
