Easy and Cheap Chicken Enchalada lasagna:
Ingredients:
to make a 9 x 11 lasagna
1 package Corn tortillas
2 cups shredded cheddar or 1 2 cup package mexican shredded cheese ( reserve 1/4 cup)
2 cans red or green enchalada sauce
1 can chopped green chilis drained
1/2 med onion finely chopped
4 chicken breasts grilled or broiled ( this is great for left over chicken) coursely chopped.
spray bottom of pan with cooking spray and place a layer of tortillas on bottom then add chicken, onion, peppers and cheese then continue layering until you have 4-5 layers or reach the top pour cans of sauce over entire lasagna and bake for 30 minutes at 350 degrees
spread on reserved cheese and bake an additional 15 min until cheese is melted and bubbly
serve with Sour cream ,lettuce and tomato
