YES. This one is soooo freaking good. I highly recommend making it with the parmesan risotto.

You are SO welcome. It's really really good. The only thing I'd suggest is to try to de-fat the roast as much as possible before you throw it in the crockpot. Since you're shredding it anyway, it really helps to get some of the fat off before you cook it. I didn't do that, and when I put the leftovers in the fridge and tried to eat them the next day, there was a fair amount of congealed fat that really grossed me out.
