    I have always browned my roast with olive oil prior to cooking and usually turns out REALLY good. My mom did it that way and I couldn't imagine what it would taste like if I didn't.

    To me it does seal in the juices and keeps the roast from being too dry. To me even when you cook it in the crock-pot it can be dry if you don't seal it and make sure it has the right seasonings.

    i ended up browning it! it was really good! my husband thought so too .
