Are menu cards really necessary? We're having a buffet if that makes a difference.

If you are having a buffet then you do not need a menu card. Just include wording on the invitation - something along the lines of "Dinner Buffet Reception Follows" or something.
Here's a sample I found online: A Typical Reception We invite you to join us for fellowship, dinner, and dancing at the Reception. Buffet on (date), (time) Plaza Vesuvius Hotel 15 Plaintain Avenue

We aren't having them. I've actually never been to a wedding with them (buffet or sit-down). One of the corners we cut was all the extra paper junk.

we had a buffet and no menu cards. the extra cost of paper and time of creating them, I just thought, "why?"
 I added a line at the bottom of the invitations saying "dinner, dancing, and general merriment to follow."
