PB&J cookies
1 cup shortening
1 cup Peanut Butter 1 tsp vanilla extract 2/3 cup packed brown sugar 1/3 cup granulated sugar 2 large eggs 2 cups all-purpose flour (i subbed in whole-wheat flour b/c that's all i use) 1 cup of your favorite jelly (i used strawberry) 1) preheat oven to 350 degrees F 2) cream shortening, PB & vanilla in mixing bowl until smooth; add sugars and continue mixing until fully incorporated 3) add eggs (one at a time) mixing until fully incorporated each time 4) add flour and mix until dough beings to form into a ball* * if your dough is softer and doesn't "ball"-- stick into fridge for 30 min to chill the fats the proceed with the rest of the recipe 5) use a small ice cream scoop to make 1/2 tablespoon balls of dough and drop on to cookie sheets lined with parchment. space 1 to 1 1/2 inces apart. use back of scoop or thumb to make a dent in the center of each cookie (only press about half way down into cookie). fill each well with about 1/4-1/2 tsp of your jelly of choice 6) bake for 10 min until lightly browned and edges are slightly firm to touch. cool on cookie sheets for 4 min; transfer to cooling racks**. leave on racks for about 30 min. or until completely cool **warning: especially if you have little kitchen helpers-- the jelly is going to be molten hot, sugary syrup when these cookies first come out, and even after you've put them on the racks. do not "break apart" cookie over anything (or anyone) that could get burned... i learned this by experience.
