Quick definiteion for those of you who don't know what it is:
Celiac disease (also called celiac sprue, nontropical sprue, and gluten-sensitive enteropathy) is an autoimmune disease affecting the digestive tract. When people with celiac disease eat food with gluten—a type of protein found in wheat, rye, barley, and oats—it provokes an immune reaction that causes flattening and damage to the small protrusions (villi) in the small intestine that absorb nutrients. Anyways, i was wondering if anyone knew of any recipes for people with this disease. My DB's little sister has this & i'd love to try & make something for her!? HELP!! |

There are some mixes that you can get at grocery stores that are really good.. Pamela's (http://www.pamelasproducts.com/Products_frames.html). I take either the chocolate cake or the vanilla cake and when mixing it I add a package of pudding (same pudding flavor) and a little bit of extra milk. It comes out moist just like regular cakes. Otherwise its dry and crumbly. (Thank you JudyB for the tip!) Pamela's brownie mix is good too. Betty Crocker is coming out with Devil's food cake, vanilla cake, chocolate chip cookie, and brownie mixes this summer (http://www.bettycrocker.com/products/gluten-free/). I have a couple blogs I follow that have good recipes. I have celiac disease as well.. I try to eat lots of just fruits and veggies.. all raw and rice cereals.. I know Publics has a lot of gluten free stuff if you have a publics near by... PM me if you have any questions!
