Tropical Torte with fresh pineapple

This is a delicious summer treat! Refreshing and you don't have to turn on the oven. You can also decorate it with blueberries and strawberries for a
4th of July theme.

1 1/2 cups melted mango sorbet, divided
1 pkg (3.4 oz) vanilla instant pudding and pie filling
1 container (12 oz) frozen whipped topping, thawed, divided
1/2 cup lightly packed fresh mint leaves, thinly sliced
1 medium pineapple
1 16-oz frozen pound cake, thawed
Blueberries/strawberries (optional)

1. combine 1/2 cup of sorbet and pudding mix in bowl;whisk until thick. Fold in 2 cups of the whipped topping;set aside. Place remaining sorbet and mint in a microwave safe bowl. Microwave on HIGH 1 1/2-2 minutes or until hot. Place strainer over a bowl. Pour sorbet through strainer; set aside. (discard mint)

2. slice pineapple. Set aside half for use later. Slice the other half and toss with 2 tbsp of the mango sauce.

3. cut pound cake horizontally into three layers. place bottom layer on a serving platter; spread with half of the filling. place middle layer over filling; spread with remaining filling. place remaining cake layer on top. frost outside of torte with remaining whipped topping.

4. slice torte and place onto serving plates. top each serving with pineapple, blueberries, if desired and mango sauce.
