Has anyone ever used Neufchatel Cheese instead of Cream Cheese when making cheesecake? I found this recipe online http://www.kraftfoods.com/kf/recipes...rry-90794.aspx and at the bottomof the page in Healthy Living it says I am subsitute the cheeses to save calories. Anyone ever tried that? Thanks!

I never used it for Cheesecake, but I have used it for other recipes that call for cream cheese and it works fine. Tastes the same but has about 1/3 of the fat.

Whenever I use it, it usually ends up making my cream cheese pie a little runny instead of firm like with regular cream cheese. But Cream Cheese pie isn't the same as cheesecake.
I'd imagine the consistency wouldn't be quite the same as regular cheesecake though...

I thought it was the same... I just made a cheescake this morning and it said Neufchatel Cheese on the wrapper. I've tried to make things with fat free cream cheese and it does NOT turn out good. It doesn't melt or soften well and it turns out weird. Use the 1/3 fat. It's still 6g per 1/8 of the bar but it helps a little though not much
I used that today to make a cheese cake and it turned out deee-lish ![]() EDIT: if you are looking at cutting fat the one I just made has less fat for some reason, a little less. http://www.kraftfoods.com/kf/recipes...ke-105199.aspx If you got fat free cool whip that would take a lot off too.
