Weight Watchers Vegetarian Quesadillas
Bean Quesadillas
Makes 2 servings Ingredients Four 6" fat-free tortillas 1/2 cup canned fat-free refried beans 1 tomato diced 4 scallions, thinly sliced 1/3 cup shredded reduced-fat cheddar cheese 2 tbsp salsa 2 tbsp nonfat sour cream Spread each tortilla evenly with the beans. Top 2 of the tortillas evenly with the tomato, scallions, and cheese. Place the remaining 2 tortillas, bean side down on top of them. Press gently to help stick together. Spray a large nonstick skillet with nonstick cooking spray. Heat and cook the quesadillas until lightly browned, about 3 minutes on each side. Cut each into quarters. Serve with salsa and sour cream.
