    Vegan pudding

    This is good! It's from "Student's Vegetarian Cookbook." (author escapes me at the moment).

    3/4 cup soy or non-dairy milk (I tried almond, and it did not work so I would stick with soy if possible)
    2 TB cocoa powder
    2 TB sugar (or other sweetener, I use agave)
    2 tsp cornstarch

    Mix the cornstarch, cocoa, and sugar together. Add 1/4 cup of the milk.

    Stir until smooth. Then add the rest of the milk, still stirring.

    When smooth microwave for 1.5 minutes.

    Stir.

    Re-microwave for 1.5 minutes.

    I wonder if coconut milk would work. I have noticed that almond milk isn't good for much other than drinking straight (or using on cereal). LOL

    Probably, it's a little thicker, I think. It didn't gel with the almond.

    Ooh, I want to try! I recently made a pudding when I made banana cream pie and I'm trying to remember what kind of milk I used. I think it was regular soy milk, but I'm not entirely sure. Whatever I used definitely worked well though.

    I think I will try this tonight! I have all the ingredients so why not? I miss pudding!

    Also, just to throw it out there, if you don't wanna use soy milk or any milk, I have made chocolate pudding from using avocados! It sounds weird but it's soooo good! Just take a large avocado, cocoa powder and sweetner and put it all through a food processor and tadaaaa! Give it a try it's yummy!
