This is a great recipe, we eat it every week and a half or so. It's pretty flexible.
Ingredients: 2T oil, divided (we use olive oil) 4T balsalmic vinegar 2T Dijon mustard 2-3 cloves garlic, smooshed (more or less to taste) 1# chicken breasts, flattened 2C sliced shrooms (we usually use 3 or 4 cups )1/2C low sodium chicken broth 1/4t thyme (we use more) Method: Marinate flattened chicken breasts in dijon, 3T vinegar and garlic for 2+ hours. (The longer the better) 1) In nonstick skillet heat 1T oil. Add chicken & marinade. Saute until cooked through (usually about 10 minues, sometimes longer depending on thickness). Transfer to platter and keep warm. 2) Heat remaining 1T oil in skillet. Add shrooms & saute. Add broth, thyme, & remaining vinegar (*I usually add more vinegar, and you might want to have a little extra broth handy incase you want to add it if the pan dries out ) Cook, stirring occaisionally until shrooms are deep brown.3) Return chicken to pan to reheat and allow flavors to mingle ![]() 4 servings = 4pts each We usually serve this over jasmine rice, which is 1 point per 1/4C. This is one of our favorite chicken dishes, DH loves it, and chicken dishes are not something he usually likes

Too bad I cant make it... I already went food shopping yesterday and dont have all the stuff I need to make that.
It's ok there is always my next shopping trip.

It took me...probably 6 months until I got to the point that I had alot of stuff like what is in this recipe stocked. I didn't used to have balsalmic vinegar...as a matter of fact, before ww I didn't even know what it was (now I love it!!). I had to change my concept of what "staples" were needed in my kitchen!

Oooh because of my mom I just love balsalmic vinegar lol... DH doesnt care to use it in foods as much as I do but he will eat it anywayz. I got him to eat a lot of stuff that my mom made for me that he never tried before. Slowly getting him to try new things.

I like making BLT's and cooking green bell peppers in the balsamic vinegar and putting that and avacado on the BLT. DH thought it was weird but after he tried it he told me to make him one.
