This is my absolute favorite chili recipe because it's so creamy and yummy and easy to make!
Ingredients
2 lb. chicken breasts, raw and trimmed of fat
1 yellow onion, chopped
2 cloves of garlic, minced
24 oz chicken broth
30 oz great northern beans
8 oz diced green chilis
8 oz diced jalapenos
30 oz whole kernel corn
salt
pepper
cumin
oregano
chili powder
cayenne pepper
cilantro
8 oz cream cheese
1/2 cup half and half
Put everything except for the cilantro, cream cheese, and half and half into a slow cooker and cook on HIGH for 3-4 hours or LOW for 7-8. Then shred the chicken (I don't bother taking it out to shred, I just shred it right in the crockpot) and then add the chopped cilantro, cream cheese, and half and half. Stir these in, and then let it cook for another 15-20 minutes. Serve with super yummy toppings and enjoy! I usually have the following toppings when I make this:
Toppings
Bacon bits
Thinly sliced jalapenos
Sliced avocado
Monterrey Jack Cheese
Tortilla strips
Sour cream
Cilantro
The toppings totally make or break the recipe! I usually pick up a thick loaf of Aldi's take and bake italian bread and sop up the leftover chili with that!
