Potato Cheese Soup with cornbread and honey butter

[Solstice]

8 cups peeled and thick sliced potatos
2 cups chopped onions
4 cups chopped celery
2 teaspoons salt
4 cups half and half
6T butter
3 C shredded sharp chedder

chopped fresh chives, shredded chedder cheese and cooked crumbled bacon for garnish

Peel and quarter potatos long way. Slice in thick sections.

Combine potatos, onions and celery in large pot with liquid and salt (you can use water, I used chicken stock for more flavor).

Boil until potatos are soft but not falling apart.

Drain liquid. (save a cup incase you want to thin the soup a bit) Return half of the veggies to the pot.

Place the other half in a blender or food processor. Add approx 2 cups of half and half and puree until blended but leave slightly chuncky.

Return to pot and add butter and remaining half and half and the cheese.

Let simmer for approx 30 min. If it is too thick for you add some of that stock water you saved.

Garnish with chives, cheese and bacon to serve.

Quick cornbread options:

Marie Callanders Cornbread mix. EXCELLENT. I add 1/2 honey and reduce the liquid.

or

One box of Jiffy corn muffin mix combined with one box of Jiffy yellow cake mix. Mix each according to the box directions, fold together and bake.

Honey butter:

1 lb butter left at room temp until getting soft
1/4 cup honey
1/2 t of cinnnamon
1/2 t of vanilla

whip together and either put in individual serving dishes or a bowl and set aside until ready to use.

Yes it makes a lot of butter but it's AWESOME on pancakes, waffles and biscuits!
