Ingredients 1 tablespoon olive oil 1 medium sweet onion, chopped 1 can ground peeled tomatoes 5 cups vegetable or chicken stock Salt and freshly ground black pepper 1/2 cup loosely packed fresh basil, thinly sliced Directions Heat the olive oil in a large soup pot over medium high heat. Add the onion and cook, stirring often, until softened, about 10 minutes. Add the tomatoes and the stock. Bring to a boil and then reduce to a simmer. Cook until soup is slightly thickened, about 20 minutes. Season with salt and pepper. Stir in the basil. Place the pot of soup directly in sink, and using a stick blender, blend until smooth. Serve immediately. I have not tried this... but so far, I haven't found anything on the foodnetwork site that I haven't loved.

You could probably just use a regular blender. (I don't have a stick blender either) I think they suggest that just for easier clean up.

I think that tomato soup and grilled cheese is going to be served one night next week at my house.

Ingredients
106 oz. can crushed tomatoes in puree 22 oz. chicken broth 24 fresh basil leaves 2 C. heavy cream ½ lb. sweet unsalted butter salt and pepper to taste Preparation Combine tomatoes, and chopped basil leaves in stockpot. Simmer 30 minutes. Add cream and butter, while stirring, over low heat. It's so good and super easy!
