Beef and Squash Stew (super easy!)
( I'm cooking this now so I'll have a picture or two in a few hours when I'm done. Also, sorry that I don't have many precise measurements. I'm a big "just wing it" kinda cook)
Red wine Beef broth Beef stew meat Butternut squash- peeled and cubed Small onion- diced Garlic- diced Spaghetti sauce or tomato paste Rosemary Thyme Salt Pepper Olive Oil In a Dutch oven or heavy pot, combine onion, garlic, olive oil, and rosemary. Cook on medium until onion is soft. While that's going, combine some flour, salt, pepper, and thyme and use it to lightly coat the beef. Once the onion is soft, throw in the beef, increase heat, and cook until the beef is browned. Deglaze the pan with wine, and add in squash and about 2 tablespoons spaghetti sauce or 1 tablespoon tomato paste. Add just enough beef broth to cover everything. Sprinkle in a bit more thyme. Cover, reduce heat, and simmer 1 to 2 hours until everything is tender. If too much liquid is burning off, either reduce heat or add more wine or broth depending on how you want it to taste. When its done, garnish with rosemary sprigs and serve with French bread. |
