This is how I make mine.
Ingredients: 1 lb of ground beef 1/3 cup of rice salt, pepper, whatever spices you usually use with ground beef diced onions (about 1/2 onion) carrots (however many you want) potatoes (however many you want) 3 tablespoons or 3 cubes of consomate (tomato bullion) 6 cups of water Mix the ground beef, rice and spices together. Form meat balls about the size of a large gumball. In a big pot add water, consomate, potatoes, carrots and onions. Boil for about 10 minutes then add the meatballs. Simmer until the meatballs are cooked. We add some rice to the stew as well. If you want to, just add about 1/2 cup of uncooked rice to the boiling water and vegetables. We also like to add lime juice to ours but we only have it out so people can add their own...not everybody does that hehe. We serve with corn tortillas. I love making albondigas! If it wasn't soo hot out here, I'd make a batch. Hope this helps |
