3 year old ate it!!!!!!!!!!!!!!!!!!
I swear this picky child has surprised me this ENTIRE week with the change of his palette! Today he ate a turkey and provolone sandwich with honey mustard and pickles from Subway! Well the soup...I call it Chicken Minestrone Soup. I dunno what to call it. I just made it up and it came out SO GOOD!!!!!!Ingredients: 1 lb boneless skinless chicken breast 2 TB cooking oil or eyeball it(I used hot chili oil and it came out AWESOME! Not too spicy!) 32 oz Chicken Stock 8 oz heavy whipping cream 14 oz can of diced tomatoes 1 tsp of dried oregano 1 tsp of dried thyme 1 tsp of garlic powder 1 tsp of onion powder 1 pkg of frozen soup/stew veggies. 2 TB chicken bouillon 1 cup water 8oz box of elbow macaroni Heat up a frying pan with cooking oil on med-high. Cut up the raw chicken into 1x1 pieces or larger if you want bigger pieces in your soup. Season with salt and pepper. Toss the chicken in the frying pay once it's heated. Cook until chicken is completely all white and juices have been absorbed. I believe I cooked it for up to 15 mins. In the mean time, combine chicken stock, whipping cream, water, tomatoes, oregano, thyme, onion and garlic powder, bouillon and water in a large pot. Heat until boiling. Then toss in the cooked chicken, elbow macaroni and frozen veggies. Lower the heat to medium. When elbow macaroni is done, roughly 10 mins or less, lower the heat to simmer and serve. ![]() Feel free to add salt and pepper according to your taste buds.
