Post-Thanksgiving Turkey Soup
Since there will be LOTS of turkey carcasses available, this seems like a good time to post this. If you were debating whether to put out a vegetable tray, this is a good reason to have one: the uneaten veggies get diced up and put into the soup!
Post-Thanksgiving Turkey Soup Turkey carcass 1 cup diced carrots 1 cup diced celery 1 small or medium Onion, diced 1 28oz can chopped tomatoes parsley salt pepper When most of the meat is removed from the turkey carcass, stick the carcass in a large pot of water and boil it for a couple hours. After about an hour, skim fat from the boiling water, take out any pieces of turkey skin, and remove any pieces of bone that have been boiled clean. Leave the rest n the boiling water and take them out as they get clean. If you had a vegetable tray for Thanksgiving, this is a good way to use the leftover carrots, celery, and green onions. If you don’t have leftovers, cut carrots and celery into ½-inch pieces and add to boiling water. Throw in a diced onion and the can of tomatoes (don’t try to drain it). The acid in the tomatoes will help clean the meat off the carcass. Add parsley with the vegetables; salt and pepper to taste. Season the soup to taste. Consider throwing in things like oregano, a little hot sauce, cut-up zucchini, potato pieces, corn, or anything else you think you’d like. If you add rice or pasta, remember to add more water because much of it will be absorbed into the rice or pasta. Heat up the amount you want for dinner, serve it with crusty bread (like French or Italian) and put the rest in a container in the fridge or freezer for later. If the soup seems too concentrated, add water. Pull out the bone pieces when they’re cleaned of any meat, or before serving (warn people they may find a small bone or two in there).
