Butternut Squash and Apple Soup
6 TBL Butter
3 Large Leeks Chopped 2 Large Onions Chopped 2 Large Potatoes Peeled and chopped 2 2 lb Butternut Squash, Peeled, Deseeded and Chopped 6 carrots peeled and chopped 6 celery chopped 2 med apples 2-4 cloves garlic peeled and quartered 4 cups chicken broth 2 cups vegetable broth ** Cut all into 2 inch pieces or there abouts. I wouldn't make them larger then that but you by no means need to make them tiny Melt butter Add in Onions and Leeks Cook with Salt for around 10 mins or until soft and translucent Add in remaining. Cover and boil. Once boiling reduce to Med Low 20 mins Remove in bathes and blend or use a stick blender Puree You can add heavy cream and nutmeg if you'd like
