My favorite Holiday recipe! "Spinach Balls"

    Advertisements
I do not like spinach when it is cooked most ways, but I LOVE these. Give 'em a shot! Theyre super easy, and they are the first things to go when my family comes over.

In a good sized bowl, mix:
    - 2 packages of chopped spinach. (Drained)
    - 2 cups of stuffing mix
    - 1 cup of Parmesan Cheese
    - 3/4 cup of melted butter
    - 6 eggs
    - 1 medium chopped onion
    - garlic powder

Mix well and chill 1 - 2 hours. (When I'm in a hurry, I skip the chilling part of it, it doesnt seem to make a huge difference.) Roll into 1 inch balls, and bake at 350, on cookie sheet for 15 - 20 minutes.

    ENJOY!

(I will post pictures of mine in a little bit, theyre almost done )
Gotta look this life in the eye.
