Alton Brown's Spicy Pineapple Sauce

Spicy Pineapple Sauce Recipe courtesy Alton Brown

1 can pineapple chunks
1 habanero pepper, minced
4 fresh mint leaves, cut into chiffonade
1 cup corn oil
2 large corn tortillas, cut into wedges
1 cup sugar and cinnamon mixture

In a small saucepan, combine pineapple chunks, habanero pepper, and mint leaves. Simmer for 5 minutes. Cool thoroughly and remove mint.
In a large saute pan, bring 1 cup of corn oil to 325 degrees F. Add wedges of corn tortillas and cook until golden brown on each side, approximately 3 minutes. Drain on paper towels.

Liberally dust warm corn wedges with sugar and cinnamon mixture.

Serve pineapple salsa over ice cream with the fried corn tortillas.

I LOVE Alton Brown! I always use his recipes! I tweak them a lot because he never uses enough garlic, but YUM.

Did you know he makes no money from the shows? he uses the entire budget to make each episode and pay the crew. He only makes money from appearances, dvds and books. And his books are great.

I will have to try this, with the tortillas...I've made this pineapple sauce a lot, usually with chicken but sometimes with pork...I think it would be good cold, as a dip, too...

I Alton Brown too! I have a couple of books and a handful of DVDS! I just found a meat DVD on clearance at Ross for $3! I was on cloud nine for a week!

Oh it would be good on chicken! Not sure about pork, I can never get pork cooked right.
