Fresh Bruschetta
Okay, this will take some personal modification to find out exactly what you like, but it's quick and easy, so it's a fun recipe to play around with. It's also a really good, not-too-filling thing to have on the table on Game Day, or Thanksgiving.
3 Roma tomatoes, cut up (use romas because they're the least squuishy) 1/2 lb fresh mozzarella cheese from the deli (the stuff packed in water is okay too) 2-3 tablespoons olive oil 3-4 leaves fresh basil 1-2 cloves minced fresh garlic salt pepper 1 loaf french bread cooking spray Dice the romas and the cheese into pieces about the size of your pinky nail, but no larger than your thumbnail. Put in a bowl, drizzle with about 2-3 tablespoons olive oil. Snip up 2-3 leaves of fresh basil using kitchen shears. Add garlic, sprinkle with salt and pepper to taste, probably no more than 1/4-1/2 teaspoon of each. Toss everything together and allow to sit for at least 20 minutes to get flavors to blend. Slice the bread into 1/4-inch rounds. Lay the rounds flat on a cookie sheet or baking sheet. Spray lightly with your favorite cooking spray (Pam or the generics, it doesn't matter) and place under broiler just until bread is toasty, about 1 minute, but watch. You want them slightly browned, not blackened. Serve the bread toasts on a platter with the cheese-tomato mix in a bowl. guests should spoon the bruschetta mixture onto the toasted bread rounds and eat like nachos. |

A lot of restaurants will do bruschettas with roastred or cooked tomatoes, so it looks dark, almost like chunky spaghetti sauce. This stuff is fre4sh, light, and it leaves soooo much room for personal taste modifications, it's a good recipe to have on hand.
I've taught my middle schoolers to make this- the vast majority of them are boys, from less-than-stellar backgrounds, who think that pop-tarts and spaghetti-os are food groups on their own. It's really, really easy, and you can use this basic recipe and modify it to make it your own favorite. |

I recommend some pepperoncini flakes, if you like a lil heat. And def Buffalo Mozzarella, divine!
