It ROCKED! The kids ate it all! I discovered I had 2 lil lonesome zucchinis in my fridge that were supposed to make a nice batch of zucchini bread, but instead they were made into this yummy fried goodness! I made this recipe up this evening. It may need a little tweaking, but you get the jist of it. ![]() 1 cup yellow corn meal 3/4 cup flour 1 TBSP (give or take a bit) garlic powder- I garlic.1 tsp Poultry Seasoning 1 tsp Italian Seasoning salt and pepper to taste ( I used I think about 1.5 tsp salt and 1/4 tsp pepper) Dash of cayenne pepper ( I would have used more, but my kids were eating it) 2 small green zucchinis 1 beaten egg with a little bit of water. Canola oil for frying. I peeled the zucchini and cut it in 1/2 then into thin strips. Mix all dry ingredients together. Heat oil in a large fry pan. Put zucchini strips into dry mix, coat. Then into egg, coat. And then back into dry, coat. Fry until golden and serve with Horseradish sauce.

I love fried zuchinni. I have not had it that way before though. I just hate the mess on my hands when I make it

I love fried zucchini, but when I tried to make it at home it didn't turn out too good. lol. I'll have to try it this way sometime.
