Quick! Egg salad - Snacks & Appetizers

I'm running to the store soon...

I like my egg salad WITHOUT onions or dijon mustard (regular mustard is fine).

So does anyone make a good egg salad w/out these things? Can I just make one w/ mayo, mustard, & salt and pepper? If so, how much of those things?

* 4 hard-cooked eggs, chopped
* 1 tablespoon prepared yellow mustard
* 1 tablespoon chopped dill relish (optional)
* Salt and pepper to taste
* 1/4 cup mayonnaise

Mix together the first 4 ingredients. Gradually add the mayonnaise until salad has the amount of moisture for your taste. Taste for flavor. Serve as is or in sandwiches.

I use a dolup of mayo, a sprinkle of dry mustard, and a squeeze of yellow mustard. Sometimes, I'll add pickle relish.

You should be fine Rach, I make it just the way you mentioned! As far as mixing/measurements... I always eye it, but probably 2-3 TBL of mayo and 1 tsp of mustard for 6-8 eggs. I like to add lemon pepper to mine too, it gives it more flavor!

Yeah I had some eggs that were about to go bad so I had to do something w/ them! And egg salad sounded gooooood!

I did Trey's suggestion since I had that many eggs and it came out perfect-o!

i'm so picky about my egg salad recipes, it makes me nervous to try new ones! but i haven't found a good one yet so i should probably start tryin 'em out!
