Ive seen them made different ways... this is how I do it

Green tomatoes sliced
1 cup corn meal
1/4 cup flour
1 tablespoon sugar
a few shakes of zatarans seasoning
vegetable oil

In a paper bag, pour corn meal, flour, sugar & seasoning, shake tomatoes in the meal until well coated. Heat oil in a cast iron skillet, over medium to high heat. Fry tomatoes quickly until they turn golden. Drain on papertowels, to remove excess oil.
