I made this salad for DH and I last night as a quick dinner, and we both loved it! He's always been really focused on nutrition since his former career was as a personal trainer, and so he pays attention to his protein intake particularly, and this has plenty of that!

8 hard boiled eggs, peeled and chopped
Cherry tomatoes, quartered (really you can use as many as you like!)
Feta or crumbed bleu cheese (I don't like blue cheese, so I used about 1/2 cup of feta)
1 chopped avocado
8 slices of crumbled bacon

3 tbs mayo
3 tbs Greek yogurt
2 tbs red wine vinegar
salt and pepper to taste

Mix the salad ingredients together, whisk together the dressing ingredients (I used a salad dressing shaker, it works perfectly!) and then stir in the dressing. So good and so healthy!!
