    Mashed Cauliflower

    Adventures in low carb meals! This was a first for me. I'm a texture person, so I'm still getting used to it (sorta had the consistency of grits).

    I took a head of cauliflower and put it in a Pampered Chef micro cooker and nuked it for about 6 minutes. I <3 that micro cooker! When it came out I could easily poke it with a fork. I added about 1/4-1/2 cup of skim milk and some salt/pepper. I mashed it up as good as I could get but it was still gritty (DH could have eaten it like that but I don't think I could have). We pureed it in the blender and then I decided to go one more step and put it in the oven with some cheddar and parm. cheese on top. I REALLY like it with the cheese. I've never had it before but it was pretty good!

    I love mashed cauliflower! We just season it up.

    Before when I was eating white potatoes, I would do half potato half cauliflower, and it was amazing

    I love cauli mash, too! You can do cauli rice, as well, by steaming it and then putting it in the food processor until chopped like real rice.

    love cauliflower as a substitute. still trying to work on my cauliflower pizza crust tho, hasn't come out like i want it to yet.

    I made a vegetarian casserole using cauliflower as a substitute a few weeks ago. It was actually delicious. I want to try making cauliflower pizza crust, I just haven't yet.

    I have a healthy potato soup recipe that uses mostly cauliflower instead of lots of potatoes to bulk it up...so tasty!!

    I don't eat potatoes so I make this all the time! I steam the life of of it, put it in a bowl with a little butter then blend it up with my immersion blender. It gets it smooth and creamy without as much cleanup as a regular blender or food processor. I season it with salt, pepper, and cavendars. So good!
