Adventures in low carb meals! This was a first for me. I'm a texture person, so I'm still getting used to it (sorta had the consistency of grits).
I took a head of cauliflower and put it in a Pampered Chef micro cooker and nuked it for about 6 minutes. I <3 that micro cooker! When it came out I could easily poke it with a fork. I added about 1/4-1/2 cup of skim milk and some salt/pepper. I mashed it up as good as I could get but it was still gritty (DH could have eaten it like that but I don't think I could have). We pureed it in the blender and then I decided to go one more step and put it in the oven with some cheddar and parm. cheese on top. I REALLY like it with the cheese. I've never had it before but it was pretty good!
