    Favorite veggie sides?

    I want to make some new veggies sides for DF and I. We are so boring We always have Caesar salad, steamed broccoli, or rosemary oven fries. I decided to be interesting and I made garlic brussels sprouts last night and they were nummy so I want more suggestions!!

    What are your favorite veggie-based side dishes?

    ...we hardly ever eat vegetables.

    Some of my favorites are:

    butter beans - made with bacon for flavoring
    green beans - I just boil them until tender
    sauteed squash/zucchini - slice thin and toss in a pan with some olive oil, garlic, and any seasonings you like
    mashed potatoes - cut red potatoes (with or without skin), cover with water and boil until tender, drain, return to pot and add milk/salt/pepper and mash until your heart's content.

    I love green beans. The kids like corn. Spinach is amazing.

    I love me some italian green beans! I just eat them straight out of the can. I want to get in the habit of fresh veggies bc I am horrible at it and just can everything.

    I like any green vegetable with butter, salt and lemon.....asparagus, brussel sprouts (my favorite!), broccoli, spinach, etc....

    I like sweet potato oven fries....and.....sauteed zucchini and summer squash. Mashed cauliflower is pretty good too.

    green bean wraps (fresh green beans wrapped in bacon and baked)

    Me: Germany - Him: other side of the world

    green beans (sometimes with crumbled bacon)

    carrot and zucchini mix: put butter in pan, then add sliced carrots and half a cup of water; when they get soft add zucchini and let simmer till all the water is gone; super buttery soft )

    eggplant: my fav is eggplant parmesan! cut 1/2 inch slices, sprinkle with salt and let it sit for at least 30 mins then rinse (helps to get the bitter taste out) then either add spaghetti sauce and parmesan and put in the oven for 25 mins (tastes a little like pizza actually ) or coat with parmesan and a little flour and fry in pan till crispy

    peas and carrots: use canned or frozen baby carrot and pea mix, put in pot with a bit of milk, seasonings and cream cheese to make a light white sauce

    You could also do different types of salads like caprese (tomato-mozzarella) or greek (cucumber, peppers, feta cheese, corn, beans, olives) etc

    also this thread makes me hungry

    Off the top of my head: Green beans, sautéed asparagus, sautéed 'shrooms, grill roasted veggie mix, Brussels sprouts, Scalloped Potatoes and Ham, Spinach Casserole, Broccoli Rice Casserole, Steamed New Potatoes with Parsley Butter, Au rotten (I mean, gratin) taters.
