    I really LOVE roasted vegetables of any sort. Some of my favorites is a medley of cubed butternut squash, sweet potatoes, Yukon gold potatoes, onions and peppers. Toss them with some balsamic vinegar, olive oil, thyme and rosemary. I roast them for about 45 minutes at 400.

    I also like to do pretty much any veggie broiled with a bit of oil for about 15 to 20 minutes. I do zucchini, tomatoes, mushrooms, onions and peppers on a regular basis.

    I also pan fry zucchini and yellow squash. I cut them into half inch rounds and lay them flat in a bit of canola oil seasoned with salt pepper and mrs dash. I get them browned but not burnt about ten minutes or less on each side. They are really tasty

    My absolute favorite is roasted broccoli. Drizzle with a little olive oil and sprinkle with salt and garlic powder. Roast at 400 for about 15 minutes. It's soooo yummy! The best way to eat broccoli.

    I also love just frozen peas with a little butter and salt (I usually just cook them in the microwave), green beans cooked with smoked sausage and onion, steamed broccoli with cheese sauce, grilled corn on the cob drenched in butter and salt, and lately I've been really into steamed sugar snap peas in orange ginger stir fry sauce.

    Roasted pretty much all of them

    Green beans- chicken broth garlic and salt and pepper
    Corn-butter sugar seasoning. Or with crab boil emmmm
    Peas butter salt pepper and sugar
    Salads any salad basically
    Artichokes roasted lemon and parm
    Asparagus- roasted lemon salt pepper olive oil Parmesan
    Brussels sprouts pan fried/ roasted butter garlic
    Carrots- glazed
    Broccoli- steam or roasted add hollandaise sauce
    Potatoes all possible ways
    Sweet potatoes

    Salad- Try making a strawberry spinach salad. It is always a big hit with my family and we use a poppy seed vinaigrette dressing.

    For veggies I make oven roasted brussels sprouts, red onion, and squash dish. Season with olive oil, nutmeg, salt and pepper bake until crispy!

    We have been loving a stir fry of kale and sweet potato (amongst other stuff lol) SO good.
    Also loving sweet potato fries

    We do a lot of green beans and corn but I also like sauteed spinach (garlic, olive oil, salt and pepper).

    Yeah I've made good progress with DH. We now eat brussels sprouts, oven roasted veggies mixes, succotash, various green salads, steamed veggies of nearly every kind, bean salads, and raw veggies with dip. He still won't eat fruit mixed with veggies but I have a much larger collection of recipes now.
