    Hungry Side dishes for picky eater?

    My DB is very picky about eating both fruits and vegetables. When he comes home from deployment we're going to try to eat healthier but I don't know what kind of side dishes to make when the only vegetable he will eat is broccoli. I have a lot of potato recipes but they aren't really the healthiest and I wouldn't want to eat the same kind of thing every night for dinner.

    Any help would be greatly appreciated!

    God I wish DH would eat broccoli. All he will eat is carrots and corn

    Hmm, what about something like brown rice? Or spring rolls, those aren't too "vegetably" in taste compared to just some steamed brocolli or something.

    Also to mix it up with the potato thing, you can do sweet potatoes too.

    My husband isn't a big fan of vegetables either. It helps him enjoy them more if I cover them in cheese. Might try that?

    For example, sometimes I'll get a frozen bag of California Mix or something, and prepare it, but with cheese melted on top.

    My stepmom tricked my dad one time, she made this casserole kind of dish with turnips but they have the same kind of texture and semi taste like potatoes so it worked perfectly, he had no clue so you could try those?

    I agree with the PP about sweet potatoes though, that's a good one to try.

    This reminded me of a funny story! When I was a kid, my grandmother fixed just plain boiled turnips once and I ate all of them that were on my plate and said "Grandma! Those were the BEST potatoes I've ever had!"

    we do mashed cauliflower, like you would do potatoes and we both love it. I actually prefer to do half potatoes half cauliflower. So much better than just potatoes
