Cheesy Zucchini Bake

My Happily Ever After: Cheesy Zucchini Bake Recipe {and some Flip Flip vino}
*Note: I followed the directions for this recipe, but omitted everything but the zucchini, squash, and cheeses. :rofl I threw in an extra zucchini, a chopped sweet onion, and flavored with a touch of garlic salt. I'm sure it would be just as good as written, I just worked with what I had. :) I also used an 11x7 dish vs. 8x8.
Ingredients
2 medium zucchini
2 medium yellow squash
5 tblspns fresh basil
3 tblspns green onion
1 can diced tomatoes
1 tblspn red pepper flakes
1/2 tspn thyme
2 tspns garlic powder
1/2 cup + 1/2 cup grated low-fat cheese
(I used 1/4 cup cheddar and 1/4 cup mozzarella to make up each half cup)
1/2 cup coarsely grated Parmesan
Salt and fresh ground black pepper to taste
First, slice up all of the ingredients.
Cut your zucchini and squash into little half moons and slice up your basil and green onion.
Preheat oven to 350 degrees. Grab an 8" x 8" dish and spray it with non-stick.
Combine everything except the extra 1/2 cup of cheese in a bowl and mix it all up.
And season with salt and pepper to taste.
Pour the yumminess into the baking dish and bake (uncovered) for 20 minutes.
Pull it out and throw that extra 1/2 cup of cheese on top so it can be nice and melty.
Then, pop it back in for 10-15 minutes.
