This is a great summer salad!
This will make 2 servings. I just tripled it to make a large bowl.
Whisk together;
1 Tbs olive oil
2 tsp lemon juice (use fresh!)
1/4 tsp lemon zest.
Add;
1/2 cup cooked shredded chicken
1/2 cup cooked diced red potatoes
3 Tbs chopped fresh basil
3 Tbs chopped fresh Italian parsley
3 Tbs low fat crumbled feta cheese
Stir in;
2 Tbs sliced scallions
1/4 cup chopped yellow pepper
1/4 cup chopped tomato
1/2 cup torn spinach leaves.
Toss all and serve chilled.
