Soooo, I had the day off and DB happens to be busy with errands all day... so, that means food-experiment day for me
Potatoes:
- Wash and cut 4-6 red potatoes, leaving the skin on, into small cubes
- Chop onions and garlic to taste
- Spray baking dish with cooking spray
- Add potatoes, onions and garlic... bake covered for 30 or so minutes (I think I had my oven at 350) until potatoes are 90% cooked through
Cheese Sauce:
I made mine in a Magic Bullet... so in the small cup that comes with the set, I added about 1/2 cup of 1% milk, 1/4 cup of reduced fat mozzarella cheese, 1/4 cup of feta cheese, a couple small chunks of fresh parmesan, a tablespoon of cream cheese, some pepper, salt and 1/2 a clove of fresh garlic. Blended that up... until a smooth consistency.
Uncover and mix potatoes, add chopped fresh mushrooms, pour cheese sauce over top of potatoes (I didn't mix it in... but you could!). Broil at 300 for 10-15 minutes until some of the cheese sauce is browned...
THEN EAT IT!
(Its not fully cooked in the pic... should be more brown on top... but its not dinner time yet and I didn't want to dry the 'taters out!)
