Threw this together tonight for dinner and it was amazing!
Tortellini Toss
1/2 red bell pepper
2 cloves garlic
1/2 c. butter
1 package refrigerated tortellini
1/4 c. feta cheese
1 small can asparagus tops
herbs and spices to taste
Saute red bell pepper and garlic in butter until soft, add asparagus and herbs.
Prepare tortellini per package directions, strain and pour into small casserole dish. Top with asparagus/butter mix and sprinkle feta over top. Bake in 350 degree over until heated through and feta begins to melt, about 8-10 minutes.
