Om nom nom!

I had some potatoes I needed to get rid of before I leave next week and not a lot of other ingredients to use, so I figured mashed was the way to go. I searched allrecipes (my bff, 4 realz) and found one that I then tweaked a bit and ended with some DELICIOUS mashed potatoes. Srsly, give it a shot.

12 red potatoes, in 1 in. chunks
1 can swanson broth (I used veggie, but chicken would work too)
2 cloves garlic, in itty bitty pieces
1/4 cu. butter (half stick)
black pepper and Parmesan cheese to taste

Combine potatoes and garlic in a sauce pan and pour in the swanson broth. It probably won't cover them, so add water until the potatoes are submerged.
Bring to a boil, then cover and cook over medium heat for 10 min.
Drain, then mash potatoes with butter, Parmesan cheese and black pepper to desired consistency.
