Brown Sugar Sweet Potatoes
8 sweet potatoes, peeled and cubed
1 c. corn syrup 1/2 c. butter 2 c. brown sugar, packed Boil potatoes until just tender. Drain and place in an electric skillet; set aside. In a saucepan, combine corn syrup, butter and brown sugar. Heat until melted, then bring to a boil for 2 to 3 minutes. Pour sauce over potatoes. Cover and simmer until heated through. Serves 6 to 8.
