Here's what I do:
I lb or so of turkey sausage pinchful of sage and oregano and pepper and such Mix it together with bread crumbs, almost like meatfloaf and make 2 loaves out of it. Then cut the acorn squash in half, scooping out the seeds. In a pan, put a bit of water. Then add the 2 loaves of meatloaf to the middle of the acorn squash and put that in the pan with the water. I cook usually about 45 minute on 400 in the oven. I serve with wild rice and a veggie. Always a big hit at my house!
