Ramen Chicken Salad (for Dawna)
Ramen Chicken Salad
Salad: 1 small head of cabbage 2 lbs of chicken, cooked and chopped 6 packs of uncooked ramen noodles, crushed and without flavor packets sliced almonds (eyeball depending on how much you want) chopped scallions (if desired) Dressing: 1 cup extra virgin olive oil 3/4 cup apple cider vinegar 1/2 cup sugar Cook the chicken (boiling works best, but frying is okay) and chop into small bite sized pieces. Chop the head of cabbage (also into small bite sized pieces). Combine in a large bowl and add crushed ramen, scallions and almonds. Combine olive oil, vinegar, and sugar in separate bowl and mix until sugar is dissolved fully. Pour dressing over salad and mix thoroughly so that everything is coated. Cover and leave in fridge overnight. Serve cold. Here is a picture of the finished product!

My mom makes that, minus the chicken. But she puts some butter in a pan and toasts the almonds and ramen noodles. Yummy.
