1 1/2 pounds potatoes (probably about 4), peeled and diced
1 red or green (or both) bell peppers; chopped
1 envelope Lipton onion soup mix
2 T. olive oil
*In a large bowl, combine potatoes, peppers, and onion soup mix until evenly coated.
In a 12 inch skillet heat over medium heat and cook potato mixture, covered. stir occasionally for 12 minutes.Remove cover and continue cooking, and stirring occasionally for 10 minutes or until potatoes are tender.
