Cornbread stuffing?
Does anyone have a recipe for cornbread stuffing?
My parents have a bunch of cornbread from the weekend (We sold chili and cornbread at the holiday craft fair). We are trying to find one that doesn't call for celery because my sister is allergic but any recipe would be helpful.

You can omit the celery from the recipe or add chopped carrots instead.
Cornbread Dressing 1/2 cup chopped onions 1 cup Celery ( use carrots or more onions) 1/3 cup butter 6 cups Cornbread crumbled 4 slices bread torn into small pieces (2 1/2 cups) can also use bread cumbs 1 teaspoon dried sage 1/2 teaspoon black pepper 3 cups chicken broth 2 eggs beaten Heat oven to 450 F. Grease 13x9 in baking dish or pan. In small skillet, cook and stir onion and celery in butter until tender. In large bowl combine cooked mixture, cornbread, bread, sage and black pepper: mix well. Add broth and eggs to cornbread mixture: mix well. Pour into greased baking dish. Bake at 450 for 30 mins or until golden brown.
