Tortellini Salad!!!
This is my own personal recipe, and it's one of my favorite things to make for lunch because it's so easy. It's also pretty cheap, and it's GREAT to take with you to pot lucks because the recipe makes a lot!
Ingredients - 1 Bag of frozen "Caesars Pre-Cooked Tri Colored Cheese Tortellini" (always in the frozen food section of the commy by the frozen seafood usually) 1 onion 1 clove of garlic 3 bell peppers (one red, one yellow, one green, I usually just buy the pack of 3) 6 dill pickle halves (I use the Claussen Kosher Dill Halves found at the commy by the pre-made potato salad and lunch meats) 1 jar of olives, drained 2 jars of Briannas Poppyseed Dressing (also at commy, has a peach on the label) Boil the tortellini - DRAIN WELL! Let cool....rinse with cold water if needed Dice onion, bell peppers, pickles, and olives - place in LARGE bowl Fine chop clove of garlic Add one jar of poppyseed dressing Slowly add cool tortellini noodles Add 1/2 of the 2nd jar of poppyseed dressing (store 2nd half for extra dressing on leftovers) Mix well This is what I'm making myself for dinner tonight, and later I'll get on and post a pic, so that you understand what it is. It's delicious! It works great as a side dish with steaks, or as a main course. Sometimes I'll dice some chicken breasts up and cook them in olive oil and a table blend spice, and throw them on top! It's a great meal, and it's quick! This recipe makes about 10 servings....maybe more
