I know I am totally late on this, but I just made it today so I am gonna post this recipe while it is fresh in my mind! Any of the amounts can be adjusted according to taste. If you like a more vinegary salad then feel free to add more, if you hate onions leave out the scallions, etc. I personally make the dressing really sweet and put TONS of almonds and no scallions. However you make it, it is delicious though!
Ramen Chicken Salad Salad: 1 small head of cabbage 2 lbs of chicken, cooked and chopped 6 packs of uncooked ramen noodles, crushed and without flavor packets sliced almonds (eyeball depending on how much you want) chopped scallions (if desired) Dressing: 1 cup extra virgin olive oil 3/4 cup apple cider vinegar 1/2 cup sugar Cook the chicken (boiling works best, but frying is okay) and chop into small bite sized pieces. Chop the head of cabbage (also into small bite sized pieces). Combine in a large bowl and add crushed ramen, scallions and almonds. Combine olive oil, vinegar, and sugar in separate bowl and mix until sugar is dissolved fully. Pour dressing over salad and mix thoroughly so that everything is coated. Cover and leave in fridge overnight. Serve cold. Here is a picture of the finished product!

It really is completely yummy. Just make sure that you let it sit in the fridge overnight (and stir it a few times if you remember) so that the noodles get soft otherwise the salad is all crunchy.

My aunt told me that she didn't let it sit long enough before taking it to work once and the ramen was still crunchy and some people loved it that way. So, you may want to try some of it while it is still crunchy because you can always let it soak longer if you don't like the crunch! The cabbage is still pretty crisp even if the noodles aren't though.I loooove this salad. I am getting impatient for the stuff I just made to get done. I need to stop talking about it so that my craving goes away.
