    Hungry Cheesy baked potato salad. (OUTCOME w/ images)

    INGREDIENTS:
    3-1/4 medium potatoes, sliced
    3-1/2 ounces sliced bacon
    7 ounces processed American cheese, sliced
    1/4 onion, chopped
    1/3 cup and 1 tablespoon and 1 teaspoon mayonnaise
    salt and pepper to taste
    1 tablespoon and 2 teaspoons black olives, sliced.


    Preheat oven to 325 degrees F (165 degrees C). Butter a 9x13 inch baking dish.
    Put sliced potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook until tender but still firm, about 10 minutes. Drain, and set aside.
    At the same time, place bacon in a large deep skillet. Cook over medium-high heat until evenly browned. Remove to paper towels to drain.
    In a large bowl, stir together the potatoes, cheese, onion, mayonnaise, salt, and pepper. Spoon into prepared baking dish. Crumble bacon over the top, and sprinkle with olives.
    Bake for 1 hour in the preheated oven, until golden brown.


    I put my own personal spin on this and it turned out delicious.
    I used about 1/3 cup of sour cream, in addition to the mayonnaise.
    And I also used about 1 tablespoon of butter.

    In addition, I used green onions rather than a large onion, because I wanted to go with the baked potato theme.
    I was out of black olives, so those were not in my experiment. And I chopped up the bacon like bacon bits and mixed it with the rest rather than putting it on top.

    It was quite delightful. Once it was done, it needed a little more salt, but other than that, my family and I were quite pleased.

    my like..favorite food ever is potato wedges..like the kind you can get from cheddars or ocharleys and it has bacon and cheese...so i know i'd love this!

    Sweet. I'm gonna try it but I think I will put my own spin on it by cubing the potatoes and baking til mostly done, then combining with the other ingredients and baking a lil more to finish off.
