this is sooo good:

You will need:
4-6 servings of rice (cooked)
soy sauce
1 egg
about 1/2-1 cup of peas or carrots cut small
1/2-1 cup of meat (leftover ham, bacon fried limp, leftover pork, leftover chicken)
vegtable oil
salt, pepper
1/4 cup chopped green onions

1. in a large pot or frying pan coat with oil and heat. saute carrots first if using them. then remove. next make sure that there is enough oil in pot and that is is hot (hi heat). crack egg directly into pot and scrample quickly.
2. once egg is scrampled (like 30sec or less) reduce heat to med and add rice, peas (if using), carrots (if using), meat, salt and pepper (to taste). Add about 1/4 cup oil and enough soy sauce to coat ( maybe 3 TBS?)
3. saute til warm through. add chopped green onions and saute 1min more.
4. serve Enjoy!
