    Easy-smeasy Mexican rice

    this stuff is SOOOOOO easy, and it's soooooooo good......

    You can do it on the stovetop or in the rice cooker.

    1 cup white rice
    1/2 cup salsa
    2 cups chicken broth

    Toast the rice in a dry pan. Add salsa and heat until liquid is mostly absorbed. Add 2 cups chicken broth, bring to boil, turn heat to simmer and cover tightly. Cook until all liquid is absorbed (about 25 minutes).

    If using a rice cooker, after the liquid from the salsa is mostly absorbed, dump the whole mess into the rice cooker with the chicken broth, seal and press "cook."

    This came about at 10:00 on Wednesday evening when my youngest 'reminded' me that we were going to make Mexican rice for her Spanish class pot-luck on Thursday morning. Of course, we had no rice in the house, so we were off to the store, and of course while we were there I went with canned chicken broth instead of bouillon in water, and hey, let's grab some of this chicken 'cuz it's a good price, and oh I'm out of diet Coke, and........

    .... well yeah, maybe you DO have an idea.

    So anyhow, the rice was done by 1:30, it was a big hit the next day, and life is good.
