I've made a simple spinach salad that was yummy.. and very simple.. just spinach and red onion.. tossed with some ranch dressing..
What about Spanikopita?

I don't like spinach much.. all I have is a couple of artichoke/spinach dips.
There is a good salad though, let me get the recipe!

My mom buys fresh spinach and steams it with a little water and vinegar.. it's yummy.
