    In the mood for some soup?

    Its getting rather cold here where I am at, and this fish soup is a good, healthy and fast meal to put together, when coming in from the cold or feel like having something lighter

    2 tablespoons of olive oil
    200 gram fish (I prefer salmon)
    1 yellow onion
    1 slice of garlic
    1/2 leek
    1 fennel (+ 1/2 teaspoon of fennelseeds if you want a little more "taste")
    1 tablespoon of flour
    0.75 dl broth (fish or vegetable)
    1 and a half dl dry white wine
    1 dl low fat milk
    1 teaspoon dried parsely (if you have fresh, add a little more)
    herbsalt and black pepper

    Chop up onion, leek and fennel (do not use any of the green parts on the fennel) Steam them with the olive oil in a big pot.
    When ready, add flour, pressed garlic + fennelseeds and give it all a good stir.
    Poor broth and wine over the vegetables, stir and let it simmer for about 10 minutes.
    Cut the fish into "tasty bites". Add them to the consomme and let it all simmer for another 3 - 5 minutes.
    Poor the milk over the soup and keep it on heat till it start simmer again.
    Add parsely and give it all one last stir.
    Finish off with some herbsalt and black pepper.
